Happy Saint Patrick’s Day!
Now, about these bars.
I saw them on Sally’s Baking Addiction last year and vowed I would remember to make them this Saint Patrick’s Day. In addition to being an adorable holiday treat, WHAT A GREAT IDEA, RIGHT!? Rice Krispie treats are one of my favorite snacks, but would I ever eat a whole bowl of Rice Krispies? Certainly not. Lucky Charms, however, are my all-time fave in the cereal aisle. Even back in college when I couldn’t afford Lucky Charms, I’d get the knockoff brand (called, I believe, “Marshmallow Mateys”).
So, Rice Krispie treat minus the Rice Krispies and plus delicious Lucky Charms? Plus some yummy white chocolate to sweeten the deal? They’re like the pot of gold at the end of your rainbow!
WHITE CHOCOLATE LUCKY CHARM BARS (recipe from Sally’s Baking Addiction)
6 cups Lucky Charms cereal
4 tbsp (1/2 stick) unsalted butter
1 10-oz bag marshmallows, plus 2 additional cups, divided
16 oz melting white chocolate* (or almond bark or candy melts)
1. Melt butter in large saucepan over low heat. Add 10-oz bag marshmallows + 1 additional cup until marshmallows are nearly fully melted into butter. Remove from heat, then add in Lucky Charms cereal and final cup marshmallows, stirring until cereal is fully coated.
2. Pour mixture into 9×13 baking dish that has been sprayed with nonstick spray. Gently spread cereal out evenly, using back of spoon (covered with nonstick spray) to gently press down cereal without crushing it. Let to set for 2 hours at room temperature, then cut into squares.
3. Line large baking sheet with parchment paper or silicone baking mat. Melt white chocolate in medium saucepan over lowest possible heat, removing from heat once melted to avoid burning. Dip bottoms of each square in white chocolate, coating generously. Place treats white-chocolate-side-up on prepared baking sheet. Allow chocolate to set at room temperature for about 10 minutes.
