I’m not alone in being obsessed with this commercial, right? It’s one of those things that — in a rational world — would’ve gone from mildly amusing to incredibly annoying by now, but somehow it just hasn’t. It makes me laugh every time.
Apparently I’m not alone, because the principal of a middle school somewhere in Connecticut had to ban kids from using the phrase “hump day” because they just couldn’t stop. And I get it. I feel like this guy’s got staying power. He’s the Budweiser frogs for a new generation.
Anyway, if you need a quick chicken dinner to throw together this hump day, see below. And if you need something to make you giggle, I think you know what to YouTube.
FIRECRACKER CHICKEN (adapted from Mel’s Kitchen Cafe)
Ingredients for the chicken:
1-2 tbsp canola oil
1 lb boneless, skinless chicken tenders (about 8-10 tenders)
salt and pepper
3/4 cup cornstarch
2 large eggs, beaten
Ingredients for the sauce:
1/3 cup hot sauce (such as Frank’s)
2/3 cup packed brown sugar
1 tbsp water
1 tbsp apple cider vinegar
1. Preheat oven to 325. Heat oil over medium-high heat in large skillet and coat baking dish with nonstick spray.
2. Season chicken tenders with salt and pepper. Add cornstarch to large ziploc bag, then add chicken, shaking to coat. Whisk eggs together in shallow dish or pie plate and dip cornstarch-coated chicken breasts in egg mixture, turning to coat. Add chicken to skillet in single layer (you may need to work in batches), and cook 4 minutes, turning halfway through cooking.
3. While chicken cooks in skillet, prepare sauce by mixing hot sauce, brown sugar, water, and vinegar in medium bowl. Once chicken is done, remove from skillet into prepared baking dish. Pour sauce over chicken and turn to coat.
4. Bake 15-20 minutes, turning once during baking, until chicken reaches internal temperature of 165. Serve warm.
