The internet can be such a magical place. A few weeks I stumbled upon this funny little website called Daily Dishonesty. It’s run by a very cool graphic designer who takes the typical little white lies we tell ourselves and makes them into pretty designs and I think even t-shirts. This is my favorite one:

Other good ones include: “I’ll Be There in 5 Minutes,” “I Will Save Half of this Paycheck,” “I Just Got Your Text,” and “I Will Only Have One Glass of Wine Tonight.” Pretty sure I’ve told all of those lies. Repeatedly.

I was not lying, however, when I told myself I’d make something light and healthy and delicious for dinner the other night. This shrimp fits the bill, plus it couldn’t be simpler.

No lie.

BAKED SHRIMP IN TOMATO FETA SAUCE (recipe from Simply Recipes)

1 tbsp olive oil
1/2 medium onion, chopped
3-4 cloves garlic, minced
2 (14.5-oz) cans of diced tomatoes
1/4 cup minced fresh parsley
2-3 tbsp minced fresh dill (or more if you really really love dill)
1 pound medium sized raw shrimp, peeled and deveined (thawed if frozen)
salt and pepper
3/4 cup feta cheese, crumbled (3-4 oz)
cooked angel hair pasta, for serving.

1. Preheat oven to 425. Heat oil in a large, oven-proof skillet on medium high heat. Add onions and cook until soft, about 3-5 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add tomatoes and bring to a simmer. Reduce heat and let simmer for 5-10 minutes, letting juices thicken.
3. Once thickened, remove from heat. Stir in herbs, shrimp, feta cheese, and salt and pepper to taste. Place pan in oven and bake, uncovered, until shrimp are cooked through, about 12-15 minutes.
