Ranch Breaded Tilapia

How’s everyone’s post-election hangover? Not too bad I hope! I usually like following elections and politics, but this year everything just got so…silly.  What with Invisible Obama, binders full of women, Big Bird, etc…this was an especially exhausting campaign. I’m more than ready to retreat from all this silliness and start focusing on more important things…probably like how none of our elected officials know how to work together anymore. Sigh.

Anyway, I won’t bore you with anymore politics — instead, here’s a super quick and easy dinner recipe that you can have on the table in about 15 minutes. Enjoy!

RANCH BREADED TILAPIA (recipe from All Recipes)

3/4 cup Italian seasoned bread crumbs
1 (1 ounce) package dry Ranch dressing mix
2 1/2 tbsp vegetable oil
1 pound tilapia fillets
1 tbsp butter

  1. Place bread crumbs in a bowl. In shallow dish, mix dressing mix and oil to form a paste. Coat tilapia fillets with paste, then dredge in bread crumbs to lightly coat.
  2. Melt butter in skillet over medium heat. Place fillets in skillet and cook 3-5 minutes on each side, or until golden brown and easily flaked with a fork.

This tasted great — I have to imagine kiddos would like it, too. I didn’t have Italian seasoned bread crumbs, so I mixed regular bread crumbs with Italian seasoning. It may be even better with panko, actually.

Another cool election thing for me? I got to cast my first in-person ballot! And I was rewarded with this sticker, which I’ve been told translates as “Hey! Ho! I voted.”
