Baked Buffalo Blue Cheese Chicken Nuggets

Remember back when Jerry Seinfeld started dating that 17-year-old girl when he was almost 40? Then remember how he broke up with her, then started dating this woman who had just gotten back from her honeymoon the week before? Then he married the second woman and she wrote a cookbook about how to sneak vegetables into kid-friendly food? Well…that was an incredibly inefficient way of telling you that these delicious chicken nuggets have secret, hidden veggies. Jerry Seinfeld approved.*

* I mean, I’m guessing. I’ve never met or spoken to Jerry Seinfeld.

BAKED BUFFALO BLUE CHEESE CHICKEN NUGGETS (recipe from Rachael Ray)

2 pounds ground chicken breast
1/2 small onion, grated
2 cloves garlic, grated
1 cup shredded carrots
2 stalks celery, finely chopped
2 tablespoons steak seasoning
1/2 cup blue cheese crumbles
1 cup flour
2 eggs, lightly beaten
2 cups crushed cornflakes

  1. Pre-heat oven to 400. In large mixing bowl, combine ground chicken, onion, garlic, carrots, celery, steak seasoning and blue cheese. Work mixture together then portion it out in golf ball-sized balls.
  2. Set up three dishes: One with 1 cup flour, one with beaten eggs and one with cornflakes. Coat nuggets first in flour, then in egg, and finally in cornflakes. Arrange nuggets on baking sheet and bake until golden brown and cooked through, about 20 minutes.

Rachael suggests a fancy buffalo dipping sauce for these, but I just mixed some low-fat blue cheese dressing with a little hot sauce. I don’t know anything about the joys of pleasing kids’ picky palates, but I gotta think these would be a hit. I don’t think the blue cheese is too strong in this, but if it is, maybe you could sub for small chunks of mozzarella or Monterey jack.
