Meatless Monday: Lemon Feta Pasta Salad

It’s hot! And you know what’s good when it’s hot outside? Pasta salad. It’s light. It’s cold. It doesn’t require firing up the oven. And it’s meatless! You know you want some.

This salad is all those things (and delicious!), but my one complaint is that it made a smidge too much dressing. If you want to keep it really light, I’d cut the dressing ingredients in half or maybe down to three-quarters. After that, dig in!

LEMON FETA PASTA SALAD (recipe from Bon Appetit Fast Easy Fresh)

7 tbsp olive oil
4 tbsp fresh lemon juice
3 tbsp whole grain mustard
1 tsp minced garlic
2 tsp finely grated lemon peel
salt and pepper
12 ounces penne pasta
2 cups small cherry tomatoes, cut in quarters
1 red pepper, diced
1 1/2 cups crumbled feta cheese
1 cup chopped green onions

  1. Whisk first 5 ingredients in small bowl to blend. Season dressing to taste with salt and pepper.
  2. Cook pasta according to package directions; drain. Rinse pasta with cold water to cool quickly and drain again. Transfer pasta to large bowl. Add tomatoes, bell peppers, feta cheese, and green onions. Pour dressing over and toss to coat. Season to taste with salt and pepper.

I love the flavorful burst of lemon in this. It just tastes so summery. If you like feta, you’ll love this!
