OK, guys. Cards on the table. My husband didn’t love this. He ate a big slice, smiled politely, then went to the kitchen to rummage for something a little less…healthy. I, on the other hand, loved this. It’s light and flavorful and makes a really great option if you’re trying to eat more healthfully. I guess we’ll just call this “girl food” and move on. I sure didn’t mind having the leftovers all to myself!
CRUSTLESS SPINACH AND FETA PIE (adapted from Skinny Taste)
10 ounces frozen spinach, thawed and drained
1/2 cup chopped green onions
2 tbsp chopped fresh dill
2 tbsp chopped fresh parsley
1/2 cup reduced fat feta, crumbled
2 tbsp grated parmesan or asiago cheese
1/2 cup flour
1 tsp baking powder
2/3 cup skim milk
1 tsp olive oil
2 large eggs, beaten
1/2 tsp salt
pepper to taste
- Preheat oven to 400 degrees. Lightly spray pie plate with non-stick cooking spray.
- In large bowl, mix spinach, green onions, dill, parsley, and cheeses. In medium bowl, mix flour and baking powder, then add remaining ingredients, stirring to combine. Add flour mixture to spinach mixture and pour into pie plate.
- Bake 28-33 minutes. Let stand 5 minutes before eating.
If you don’t want to have this for Meatless Monday, you could make this as a side dish next to something more traditional.
